Oh boy, do I have a delicious recipe for you! I was randomly craving stuffed peppers last week and so I decided to just whip some up last night. I did not follow a specific recipe but rather combined a few and used what I had – lucky for me, this turned out delicious. Typically when I cook, I don’t measure…in fact, my grandmother (an outstanding cook) once told me that a true chef never measures, but does everything “to taste”! I have always followed this rule of thumb, but I tried to recap the recipe I created for you. Just know that nothing is exact, so alter it to your own liking. Stuffed Peppers
An easy, delicious recipe to whip up in less than 30 minutes. Enjoy!
Ingredients
- 1 lb ground turkey
- 1/2 yellow onion
- 2 cloves garlic
- 1 cup pre-cooked brown rice
- 1/4 cup frozen peas
- 1 can tomato sauce
- 3 bell peppers
Instructions

Preheat the oven to 375 and grease your baking pan (I used a cast iron).

On the stove, brown the ground turkey; then add the onion and garlic to saute together.

Mix in the tomato sauce, brown rice and peas. Add desired seasonings (I used salt, pepper, oregano, basil and crushed red pepper).

Spoon mixture into hollowed out bell peppers and bake in the oven for 20-30 minutes, or until peppers become soft.

Top with cheese and cilantro. I served with a simple side salad. Enjoy!
